Mom Kent's Butter Bean Bake


My mother always made this dish for me when I was coming for a visit. She knew it was my favorite recipe of hers...well, along with date cake.

3 c. canned butter beans
1 1/2 lbs. ground beef
2 c. celery, chopped
2 c. onions, chopped
1 green pepper, chopped
2 cans tomato soup

Saute celery, onion, ground beef, and green pepper. Drain beans and add mixture and one can of soup, salt and pepper. Spread one can of soup on top of the casserole before baking. Bake at 350 degrees for 40 minutes or until bubbly.
