Recipe of the Week - Salisbury Steak

Salisbury Steak 

This is a little time consuming to make but well worth the effort.  I often make this to take to shut-ins or those recovering from surgeries, etc.  I pack it up with some mashed potatoes or mac and cheese, peas, and a yummy dessert.  It always gets rave reviews.  

1 1/2 lbs. lean ground beef
1 10-oz. can condensed onion soup
1/2 c. fine bread crumbs
2 eggs, lightly beaten
2 tbs. grated Parmesan cheese
1/2 tsp. onion salt
1/8 tsp. pepper
1 tbs. oil
1/4 c. flour
1/4 c. beef broth (bouillon)
1/4 c. + 2 tbs. catsup
1 tsp. Worchestershire sauce
1 tsp. sugar
1/2 tsp. dry mustard

Preheat oven to 350 degrees.  Combine beef, 1/4 c. onion soup, bread crumbs, eggs, 2 tbs. catsup, 1 tbs. Parmesan, onion salt and pepper.  Shape into 6-8 oval patties.  Brush large skillet with oil.   Dip patties lightly in flour; brown on both sides over medium heat.  Pour off fat.  Arrange in 9" x 13" pan.  Mix remaining onion soup, beef broth, 1/4 c. catsup, Worchestershire sauce, sugar, 1 tbs. Parmesan and dry mustard in small bowl.  Pour into skillet; heat, stirring to loosen browned bits.  Pour over patties; cover with foil; bake 25 minutes.  Serve with mashed potatoes.
