Recipe of the week - 15-Minute Pineapple Pie

Here's dessert in a flash!  So easy and so delicious. 
Oops,  did you notice a piece is missing?  Sorry, I just couldn't wait! 

15-Minute Pineapple Pie

2 (1.5 oz. ) pkg. Vanilla Instant Pudding (Sugar Free)
1 (20 oz.) can crushed pineapple, undrained
1 (8 oz.)  carton sour cream
1 9-inch  graham cracker crust
 In a large bowl combine the vanilla pudding mixes, undrained pineapple and juice and sour cream.  Mix well.  Pour into pie shell.  Top with whipped cream and a sprinkling of toasted coconut.  Chill 2 hours before serving.  Do not make vanilla pudding according to the package directions.
