Sweet and Spicy Red Pepper Relish

Sweet & Spicy Red Pepper Relish

2 large red peppers, finely chopped
1 onion, finely chopped
1/4 c. corn syrup
1 1/4 c. sugar
1 c. white vinegar
1/2 tsp. dried red pepper (less for a milder relish)
couple of drops of hot pepper sauce
1 tsp. salt
few drops of red food color
2 tbs. cornstarch
1/4 c. water

Combine all ingredients except cornstarch and water in a sauce pan.  Bring to full boil, and turn down heat to medium and let simmer for 2 hours or until thickened down.  Mix cornstarch with water and stir into pepper mixture.  Stir until translucent.  Ladle into jars.  Makes two pint jars.
