Foody Friday - My Favorite Birthday Cake

Coconut Marshmallow Chocolate Cake

Well, my birthday is this coming week, and there has to be something good about growing older.  For me, that would be this cake.   Perhaps I will bake the cake ahead and freeze it as we have family arriving.  The bookkeeper, Jeanine,  at the home building business where I was formerly employed made this for me...every birthday for many years.  Yumm! 

Hershey's Deep Dark Chocolate Cake
1 3/4 c. flour
2 c. sugar
3/4 c. cocoa
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
1 c. boiling water
2 eggs
1 c. milk
1/2 c. vegetable oil
2 tsp. vanilla

Combine dry ingredients in large mixing bowl.  Ad remaining ingredients except boiling water; beat at medium speed 2 minutes.  Remove from mixer;  stir in boiling water (batter will be thin).  Pour into greased and floured  two 8"-9" layers pans or one 9" x 13" pan.  Bake at 350 for 30-35 minutes or until cake tester comes out clean. 

Chocolate Filling (For Cakes)


1 c. butter
1 c. confectioners sugar
1/2 c. cocoa
2 eggs, or equivalent of egg beaters

Cream butter and sugar.  Add eggs and cocoa, beat thoroughly until mixture is consistency of whipped cream.  Spread between cake layers. 

Marshmallow Frosting
2 egg whites
1/4 tsp. salt
1/4 c. sugar
3/4 c. light Karo syrup
1 1/4 tsp. vanilla
Beat egg whites and salt until soft peaks form when beater is raised.  Gradually add sugar, about 1 tablespoon at a time, beating thoroughly after each addition.  Continue beating until stiff peaks form when beater is raised.  Fold in vanilla. 

Note:  If you are concerned about eating raw egg whites, use pasteurized egg whites.  (It's also great for a facial mask also!) 
And, of course, the final topping on the cake....a dusting a coconut.  I'm thinking I just might like to make than marshmallow frosting with a little bit of espresso powder added, and then topped with chocolate shavings, dusted cocoa or toasted almonds???
