Fabulous Finds Friday

Yes, we did make it back to Mesa Lutheran Thrift for their 50% off Saturday Sale!  Such fun!
Love this place!!!! 
 A guest pianist serenaded us with Georgian Chants while we were shopping...
so soothing and relaxing! 
Hubby purchased a chromed shoe rack for $2.50.
Loved these framed watercolors 2 @ $9.00 each.  (Take a look at the original price!)

  And of course, a trip to Wildflower Bread Company for lunch (loved this sandwich):
Roasted Sweet Potato Sandwich
Roasted Sweet Potato with fig confit on Fococcia

(here's the recipe) 


  • 1 5″x 5″ piece herb focaccia bread
  • 1-1/2 ounces fig confit
  • 2-½ ounces roasted sweet potato slices
  • 1-1/2 ounces sliced fresh mozzarella cheese
  • 3 slices of tomato
  • 1/2 ounce arugula
  • 1-1/2 ounces balsamic marinated fennel
  • 1/2 ounce balsamic dressing


  1. Slice focaccia in half to make top and bottom halves.
  2. Spread fig confit on bottom half of focaccia.
  3. Cover with sweet potatoes, cheese and tomatoes.
  4. Evenly cover with arugula and fennel.
  5. Drizzle with balsamic dressing and place remaining half of the focaccia on top.
  6. Slice in half diagonally.

Yes, we have been thrift shopping again!  I think my husband is enjoying this more than I.  Bet you he'll be wanting to head out to East Valley Lutheran Thrift this Saturday as is it 50% off everything day!  It's usually linens & dishes for me and household items and shoes for him.

Starbucks Pumpkin Pound Cake

Starbucks Pumpkin Pound Cake
  • 1 & 1/2 cups all purpose flour
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 1/4 cup milk
  • 3 egg whites
  • 1 cup canned pumpkin
  • I might add some mini-chocolate chips
  1. Preheat oven to 350 F. Grease a loaf pan, set aside.
  2. Whisk the flour, cinnamon, salt, baking soda, baking powder, cloves, and nutmeg into a bowl. Set aside.
  3. In a large bowl, combine the sugar and brown sugar, milk, and egg whites. Whisk thoroughly until blended.
  4. Stir in the pumpkin.
  5. Add the dry ingredients to the pumpkin mixture. Stir until completely incorporated.
  6. Pour into pan and bake for 60 minutes, or until toothpick inserted comes out clean.
  7. Cool on a wire rack.

Arizona Gardening

How good it seems to have the weather cooling down in the evenings and early mornings here in Arizona, and with the cooler temperatures, I am so desirous of getting outside a bit more and to get digging in the soil!  I have found that the Tucson Lifestyle Home and Garden Magazine online is so helpful in aiding me in knowing what to plant and when here in the low desert of Arizona.  I am passing them along hoping they might be of help to you all.

Lori's Yummy Meatloaf

Lori's Meatloaf

1 1/2 pounds of ground beef
1 cup of bread crumbs
1/3 cup of ketchup
1/4 cup of chopped onion
1/4 cup of frozen and thawed green peppers.
1 egg, slightly beaten
1/2 tsp. salt
1/2 tsp. pepper
1/4 cup of ketchup
1/4 cup canned crushed pineapple
Combine first seven (7) ingredients and form into 8" square pan or bread pan.  Bake 40 minutes at 350 degrees for 40 minutes.  (We added a little pineapple juice to the ground beef mixture.)
Combine ketchup and pineapple and continue to bake for another 30  minutes or until done.
